Pizza beans are a cozy, comfortable, unfussy one pot meal meant to share.

Inspired by Smitten Kitchen, Pizza Beans have become a fall staple for our own Devon Salisbury, who shares this meal with Tegan Wright during an upcoming segment of his From Away series on Maine’s CW.
Pizza Beans
Ingredients

2 cans of white beans OR 2 cups of cooked Gigande or Royal Corona beans

Onion
-
Garlic
-
Parsley/basil/oregano/thyme (any one or combo)

Sweet or hot Italian sausage

1 can tomato OR 2-3 garden tomatoes, boiled, peeled, and smooshed.

OPTIONAL: Kale, carrots, leeks, zucchini, spinach, peppers, grated parmesan, romano, asiago, mozzarella (any combo)
Method
- Preheat oven to 350

Brown sausage. Add diced onion with sausage and saute.

Coarsely chop and add any other vegetables and cook until everything is softened,

Add tomato and garlic with a splash of red wine.

Add beans and herbs and mix until combined.

Top with grated cheese and bake in the oven oven for 15-20 min, until bubbling and cheese is melted.
- Slice a loaf of your favorite bread, smother with butter or olive oil, and toast in the oven until just crusty.
- Share and enjoy!
Variations
- Go French by omitting tomato and using Swiss cheese.
- Go Greek by adding olives and feta.
